Restaurant Anne at the Pavillon de la Reine
By Sandra Serpero
Welcome to Anne’s, a restaurant located on the ground floor in the hotel’s library lounge. This table, named after Queen Anne of Austria, mother of the Roi du Soleil, shows off her royal paw. In the background, chef Mathieu Pacaud (who previously worked at L’ambroisie, Divellec, Apicius) has created a high-flying menu that pays tribute to French gastronomy. At the controls, the young chef Edouard Chouteau, who has worked in the kitchens of the greatest chefs (Le Bristol, Pierre Gagnaire, L’arpège). At ease in this sphere of excellence, he brilliantly took on this demanding menu, cultivated a love of beauty and deliciousness, took on audacity and celebrated gourmet cuisine in a way that was truly memorable. That particular evening, a carte blanche menu with a parade of tasty dishes (splendid variations of scallops, charming roasted yellow poultry…) and dessert that completes this sequence in style: chocolate soufflé, airy, delicate. The verdict? Sublime.
