La Galette Lenôtre by Guy Krenzer: O delight!

We’re a bit ahead of time, we skip Christmas and the pudding, and head straight towards January and the Epiphany to enjoy Maison Lenôtre’s sublime crown.



This year, chef Guy Krenzer sought inspiration from the Bordeaux brioche, which he redesigned into a brioche puff pastry made from noble products. Filled with a sweet almond and hazelnut filling and a chocolate cream poached with lemon zest, it is slightly caramelized to arouse even more desire. And inside, not one but two “fèves”: a classic one decorated with motifs illustrating the ingredients and a real bean to fully respect the tradition. Chef Guy Krenzer can see himself biting into one in the morning with a good coffee, while Olivier Poussier, the sommelier of Maison Lenôtre, likes to accompany his with a glass of sweet wine, Montilla Moriles Pale Cream Solera.
