There is not only the festival or the Palais des Papes in Avignon! There is also this true historic site, La Mirande, converted 26 years ago, in a hotel with bewitching charm. This house has had various owners since the seventeenth century, the Stein family, originally from the Ruhr area, inveterate travelers who acquired this house. Today, Martin Stein is at the helm of this five-star with 26 different rooms and suites, few steps from the Palais des Papes. “La Mirande exudes beauty and elegance of French decorative arts of the eighteenth century.” The new and young chef, he is 28 years old, Florent Pietravalle has already worked among the greatest: in Paris at Joël Robuchon for a year, as sous chef then at Rabanel in Arles, then 4 years as sous chef at Pierre Gagnaire rue Balzac. If every chef says “the product is central to my work, » he puts this claim into practice: three mornings a week, we can meet him between the market stalls of St. Etienne-du-Grès. He treats us with simple and seasonal products: anchovies of the Basque Country, marinated with Espelette pepper, peas and broad beans from the garden, Mediterranean red mullet, Galician beef … to test immediately!
