After Virginie Basselot, starred-chef and Best Worker in France of Saint-James Paris, and Benoit Gauthier, chef at Grand Pan, it is Juan Arbeleaz who creates a pop-up menu at the Atelier Renault Café. Having served top tables, this young Colombian heads up Plantxa in Boulogne-Billancourt, where he channels his dynamic work-ethic and creativity into devising inventive and flavoursome cuisine. At the Atelier Renault Café, he has dreamed up three dishes: citrus-marinated sea bream with ceviche sauce: grilled poultry with chorizo, carrot and chimichurry and cream of Kalamata olives; and a pineapple and basil coulee, light vanilla and lime mousse, speculos crumble and crispy meringue for a totally light finish.
