Laurent André settles at the Café de la Paix
He was known for his light and refined cuisine at the Royal Monceau, here he is at the Café de la Paix. At the age of 48, Laurent André takes over the kitchens from the mythical Parisian restaurant, but also from the InterContinental Paris Le Grand, with the firm intention of giving a youthful touch to the menu without renouncing the great classics of brasserie cuisine such as the Burgundy snails with herbs, or the frog legs with parsley butter. Not to mention those concerned about their line with mimosa eggs and royal crab or a poultry with broth accompanied by winter vegetables. And a few weeks after his arrival, Laurent André clearly shows his ambition: to get – at least – a star for the Café de la Paix!
